After harvest, ripe coffee cherries are spread out on raised beds or patios and left to dry naturally under the sun. The fruit remains on the bean, allowing the sugars and flavors to soak in during the drying process.
This method can take two to four weeks, depending on the climate, but the result is worth the wait.
