Gayo Arabica Honey Process: Sweet Complexity from Aceh
7/25/20251 min read
Gayo Arabica comes from the lush highlands of Aceh, Sumatra, one of Indonesia’s most renowned coffee regions. Known for its clean environment and altitude above 1,200 meters, Gayo produces high-quality Arabica with bold character.
One unique method used here is the honey process—a technique that lies between washed and natural processing. After the outer skin of the coffee cherry is removed, the sticky mucilage (“honey”) is left on the bean during drying. This adds natural sweetness and complexity to the cup.
🍯 What to Expect in the Cup:
Flavor: Sweet and fruity with notes of honey, red berries, and spice
Finish: Clean, syrupy, and satisfying
